Beef,pork,baby back,full rack or whatever.
Clean up ribs and pull off the thin layer of silver off bottom side.
Make very shallow slits between rib bones in the middle of them.
Pat dry and wipe a tiny bit of mustard on top and side edges.( the mustard is just a binder and you cant taste it after cooking)
Cover the top side with your favorite RIB RUB.
Do the same to bottom side.
Let ribs set until room temp(I set them out and get them room temp before starting)
Put on grill or in oven at about 350 until seared on both sides.(flipping of course)
Wrap in foil with 3/4 cup of a beer and 1 cup of water.(beer optional but tenderizes them great and the alc boils off anyway,add more water if not beer)
Cook at about 325 for about 15 minutes and flip over.
Cook another 15 minutes.
Take ribs out of foil and trash the juices/foil.
Spray ribs with pineapple juice/apple juice 1/2 part to 1/2 part mixture.
Put BARE ribs back on grill for a few minutes flipping and spraying with juice mixture.(rib bones should be sticking out 1/2" by now and starting to blacken up a tad)
Kinda hard to do this in a oven and I prefer a grill.
Mop ribs with your desired BQ sauce flipping over and over for another 10 to 15 minutes.I say mop them because there is a huge differ in the product if just wiping on sauce with a spoon or fork.
I have done ribs many differ ways and all racks off ribs take differ cooking time to be good,so its up to you to get them right.You can sprinkle brown sugar on them also to a pretty glaze during cooking or add whatever ingredients you desire.It took me years to make good ribs and wasted many pounds of charcoil,propane and electric to figure it out along with many ribs.The key is to keep them moist and 165 degree is plenty if putting a thermometer in the center.
I bought a Thermometer years ago that has a thermocouple lead to it and heat doesn't bother it.You read the temp by the unit.This way you don't need to open the grill,oven or smoker door.I trust it way more compared to a dial type on the grill or smoker.Ovens are close but none tell you the inside product temp unless you use the one I talked about.Attachment Deleted
