Ok I mentioned in another thread we went out and found new comfort food place. Anyway, they had a chicken, potato and cheese drumstick that I loved so much I ask for the recipe. Well the chef/cook gave it to me of sorts. I was told what was in it but not the amounts. His words were that's all you get you need to work it out for yourself. Well i got it and i think mine may be better. I think he used a grill seasoning in his, but I went Cajun and we all like them. Even my little picky eater tears them up, today was second test and still the same she tore hers up.
It may sound like its work but it's not bad at all.
Potato Chicken and Cheese Drumsticks
2 lb chicken legs
1 lb potatoes
8oz shredded mozzarella cheese
2 bay leaves
6 pepper corns
black pepper - to taste
salt - to taste
1 to 2 cups flour
2 eggs, well beaten
1 to 2 cups breadcrumbs
1 TBS Slap Ya Mama seasoning
Peel and chop the potatoes, add to a medium pot and cover with water, cook until fork tender. Drain and mash the potatoes adding 1/2 tsp salt and 1 tsp black pepper. Set aside
In a second pot add the chicken legs, the bay leaves and pepper corns, cover and boil until tender. Drain and reserve the broth, remove the skins, discard. Remove the meat from the bones, cleaning and reserving the bones. Chop and/or shred the meat.
Into a large bowl add the meat, potatoes and shredded cheese. Add 1tsp black pepper and 1/2 tsp salt. Mix well then form into tennis ball sized balls. Form that around a leg bone making it look like a drumstick.
Put the flour, eggs and breadcrumbs into pie pans or equivalent. Add the seasoning to the breadcrumbs. Roll the drumsticks in the flour, then egg, then breadcrumbs.
Fry until golden brown and serve.
