Ok the aunt has been at it again and I got the results, and I made them, and they are great for dunking in coffee, milk or whatever your favorite liquid would be. Hers I her "coffee" And it is a very acquired taste thing. Hers these days is roughly 15oz stout coffee and 1 oz or so of Glenlivet. She says she only does 1 cup in the morning, but she is a Cajun so she may tend to have memory troubles LOL.
Anyway, I have added the US measurements to the recipe. And for the oven I used 400ºF not the actual temp it calls for.
Yorkshire Fat Rascals - copycat
Ingredients:
150g Unsalted butter (2/3 cups)
70g Brown sugar (1/3 cup + 2 tsp)
Zest from 1 orange
1 tsp Mixed Spice - see below
1 tsp baking soda
150g all-purpose flour (1 1/4 cups)
150g Self-raising flour (1 1/4 cups)
2 eggs, beaten
1/4 cup buttermilk
100g mixed peel (1 1/3 cups)(candied citrus peels)
80g currants (1 cup)
Pinch of salt
glacé cherries cut in half (cherries in the jar)
blanched almonds
Method:
Preheat oven to 200ºc (392ºf)
In a large bowl cream together, the butter and sugar. Add the spice mix and Zest and beat again. (I used the hand mixer)
Add the flours and baking soda then mix in gently. Add the buttermilk and beat by hand, Add all the fruit and stir in. The batter will be thick.
Divide the batter into 15 gram balls. (I made mine about the size of a tennis ball) Place on a parchment lined tray. Place 3 almonds in the shape of a smile one side of each ball, add 2 cherries on the other side for the eyes. Egg wash the tops.
Bake at 200ºc(392ºf) on the middle rack for 18 to 20 minutes.
Serve warm or cold, either way they dunk well. (1 cookie is enough for breakfast; these puppies are huge and thick).
Mixed Spice:
1 tbsp cinnamon
1 tsp Nutmeg
1 tsp allspice
1 tsp ginger
1/2 tsp cloves
1/2 tsp coriander
Mix and store in an airtight container. I may be weird but I'm going to try the leftovers in a pumpkin or sweet potato pie.
