The granddaughter needs to get her phone looked at I think but then I am no guru so maybe not. Anyway she is having trouble sending things at times and it seems she gets as wet as I do over my phone skills. I know the reason but will not out it here. Anyway she sent me several links to a few good recipes and I tried a modified version of this one this morning for lunch and it's a keeper for me. I did leave out the avocados because they are restricted from my diet - they are loaded with potassium and phosphorus and those are my main failures even when I'm eating right. Just so many things have them naturally and then some packaged foods have added evilness. So here goes.
California Roll in a Bowl
Ingredients
1 cup sushi rice or other short grain rice
1 ¼ cups water
2 tablespoons rice vinegar
1 large avocado, diced
8 ounces (imitation) crab legs, diced or cooked shrimp
1 cup english cucumber, diced
½ cup mayonnaise
2 teaspoons sriracha
Sesame Seeds sliced green onions, and/or Nori Furikake, Pickled Ginger, Wasabi paste for garnish
Instructions
Rinse the rice under cold water for 30 seconds until the water runs clear. (I use a mesh strainer to do this)
Add the rice and water to a medium pot and bring a boil over medium-high heat.
Cover and reduce the heat to low and simmer for 18-20 minutes until the water is absorbed
Add the cooked rice to a large bowl and drizzle with the rice vinegar then stir to combine.
Set the rice aside and cool completely.
Whisk together the mayonnaise and sriracha in a small bowl. If desired, add in a tablespoon of water to thin the sauce.
Assembling the Sushi Bowls
Divide the rice between four bowls. Top with avocado, imitation crab, and diced cucumber.
Drizzle the spicy mayo over top.
Garnish with soy sauce, sesame seeds, green onion, or nori furikake, Pickled Ginger, Wasabi paste.
The reason for the Imitation legs is that's what we had in freezer same with the shrimp, I am not a huge fan of Walmart pre-cooked shrimp, but they worked nice in this dish. The other thing I left off was the nori furikake - we didn't have it and the local stores don't carry it. But I do have a small bottle coming VIA Amazon so it will be all good next time I lap a lip on it.
I did divvy it up like stated but I put it in sealed containers for the fridge and will munch on them for lunched until they are gone. Well ok only 2 left now, had company for lunch LOL.
