Today is our last big canning day for a while I hope. Nothing spectacular just jams but we needed the freezer space. Not going to post the recipes - they are from the ball book anyway. We did Blackberry, Strawbery and Wild Plum (sand plums here). All went well except for on boo boo. I think we hand someone watching over us this morning, one of my shadows dropped a half pint jar - with no lid and got a nice hot jam bath. The saving thing was it wasnt real hot, we had filled all the jars and were wiping the rims and sealing them up. Had we been going normal the jar would have been filled with the extremely hot jam right from the pot. We had a bit of excitement then some name calling then a stern word or two. We were just going to fast and the jar slipped. Anyway no real injuries just a few red spots after a shower to get the sticky goo off. Ok for me it was darned funny but I bit my lips to keep from laughing. I had just said everyone needs gloves on (we use cotton gloves most of the time) and got the remark oh hocky we are good enough we dont need them. Well didnt take long to eat those words. And it came from the same one that dropped the jar.. But a quick shower and a change of duds and she was back in the mix. We did 1 double load of each fruit plus a load of mixed. Lets say we made enough jams to use 25lbs of sugar... And pretty much wiped out our supply of bulk pectin. So I see need to order but will wait till after Christmas to allow for Christmas cooking to begin. LOL. I bought up a bunch of half gallon ball jars and they hold a hefty amount of cookies and when vacuum sealed they will last a good year and not lose any flavor. We already filled 12 of the jars with fresh cranberry juice (well ok it wont be ready until mid Jan). ok need to get off here and help with unloading the last canner, I'm the tallest and we used the big canner...
