My son has been nagging me to cook some flank steak. So I finally did. Coffee Rub of course.
I bought a 2 pound flank steak at the supermarket and cut it in half. Cooked one full on coffee rub going the whole nine yards, and the other a semi-coffee rub.
1: Marinate your steak for two hours in whatever marinade you prefer (I prefer Hoover Sauce)
2: Instead of peeling fresh garlic as I used 2 rounded Tablespoons of dried minced garlic. I think I will continue to do this because it's easier to rub on the meat since it's drier, and it keeps better.
3: Add 2 rounded tablespoons of ground coffee
(I use decaf, but that's up to you)
4: Add 2 rounded tablespoons of brown sugar
5: Add 1 level tablespoon of salt
6: Add 2 heaping teaspoons of Italian seasoning
7: Add 2 level teaspoons of ground pepper
8: Mix rub well with a fork or whisk.
9: Remove meat from marinade, drain, pat dry with paper towel
10: Coat with rub and massage vigorously.
11: Keep patting more rub on the meat until you've used it all up. Try to have an even coat all over.
12: This time I cooked it in an air fryer at 400F, until meat thermometer says "medium rare". (I use a beef button thermometer)
13: Let it rest for 5 minutes. I just left it in the air fryer with the lid off.
I goofed and wasn't watching when it got to med rare, so it went closer to medium, but it was still really good. It was the juiciest steak I can ever remember eating. And tender. My son asked how it compared to filet mignon, and I told him "coffee rub is the great equalizer. It even makes duck tastes like filet mignon."
