OK this is not dad its Jayme. I can't remember my password so I'm using his account. I am kind of tired of his constant bitching about me not ever being on here anymore. Ok I am working the better part of 60 kours a week every week anymore. Take a friggen vacation and still work more than 40 hours a week. Yes, I understand I am working myself to death, but the hubby is doing the same, if he's not farming, he's over with the lawn care crews. DO we need the money no, but I am my fathers girl whether he accepts it or not. He worked just like this when he had a regular job plus farmed. Now he is sidelined, and we are running everything at the farm plus our lawncare business and I am still working full time too for the insurance. Anyway, all that to get to here. I am posting my apple/pear butter recipe so dad will get off my butt. I sent it to dad thinking he woudl post it but NO! he got on a high horse and just kept griping.
Roasting Pan Apple-Pear Butter
8 lbs apples (cooking apples)
4 lbs ripe pears
4lbs brown sugar (two bags)
1 lb white sugar
1 cup apple pie spice
1/2 cup water
This recipe about is 75% apples, cored. peeled and rough sliced and 25% pears, cored, peeled and rough sliced.
In the cooker add the water and apple/pear pieces and cook on low for 10 hours or overnight, stirring a few times.
Add the sugar and spices, mix in then puree with a hand blender (or do small batches in standard blender but be careful its hot) to a smooth consistency. After blended cook for another 3 hourrs or more on low to your desired thickness.
While cooking prep your jars and lids.
Add the puree to jars using ladle and funnel. Leave 1/2-inch headspace. Wipe rims and put on the lids and rings fingertip tight.
Process the jars in a water bath canner for 15 minutes and then allow them to cool.
Label and store. Makes about 18 pints +/-
Amounts are cut in half for a large crockpot.
Weigh the products on a scale in a bowl for best results.
Not part of this recipe but its handy.
You can use store bought apples - 1 bag apples and 4 pears. You can leave the pears out but add 4 more apples
2 cups brown sugar and 1/4 cup white, it helps with the molasses taste of the brown sugar.
3 Tbs of apple pie spice or pumpkin pie spice works too.
2 Tbs lemon juice to help get rid of the store bought taste of the apples.
This makes about 3 pints of ready to use butter. You can waterbath 2 and eat the other.
