Ok last week we went hunting wild grapes on another's property and found a hidden or collapsed root cellar. Anyway, to date we have dug up, yes actually dug them out of the hole in the ground over 200 mason jars of all sizes. We will go back later on but right now EVERYONE has had all the jars we want to deal with. We are still washing them and so far only tossed about a dozen due to some problem.
We wash our jars in vinegar solution. First it actually dissolves funk off the jars where clorox only lightens the problem. This is a hand on washing method but we know they are clean before using them. We do finish the job on the dishwasher set to disinfect the jars.
Today was a wash and can day with tomato soup being up this time.
Spiced Tomato Soup
Ingredients:
16 cups chopped, peeled and cored tomatoes - any kind
3 1/2 cups chopped onions
2 1/2 cups chopped celery
2 cups chopped red peppers
1 cup sliced carrots
7 bay leaves
1 tbsp whole cloves
1 clove garlic
1 cup lightly packed brown sugar
Salt & pepper
Directions:
Place the required number of clean pint mason jars on rack in pressure canner; add water and heat jars to a simmer (180°F). Set screw bands aside. Keep jars hot until ready to use.
Preheating lids is not advised. Simply wash lids in hot, soapy water, dry, and set aside until needed.
Combine tomatoes, onions, celery, peppers, carrots, bay leaves, cloves and garlic in a large stainless steel saucepan. Bring to a boil; reduce heat and boil gently until vegetables are tender. Discard bay leaves. Puree soup in small batches. Return pureed soup to saucepan. Add sugar and season to taste with salt and pepper. Heat soup to a boil.
Ladle hot prepared soup into a hot jar to within 1 inch of top rim (head space).
De-bubble, wipe jar rim, seal with lid and ring to fingertip tight. Return filled jar to rack in canner. Repeat for remaining soup. If stacking jars, place a second rack between layers of jars.
When pressure canner is full place lid on and allow steam to escape steadily–for 10 minutes; close vent.
When canner reaches the pressure appropriate for your altitude* and type of pressure canner, begin counting processing time. Process – heat filled jars – in pressure canner – pint jars – here its 20 minutes at 10 lb.
When processing time is complete turn off heat. Allow canner to stand undisturbed until pressure drops to zero. remove jiggler and wait 2 minutes, and then remove cover, tilting it away from your face. Remove jars without tilting. Cool upright, undisturbed 24 hours; DO NOT RETIGHTEN screw bands. After cooling check jar seals. Sealed lids curve downward. Remove screw bands, wipe and dry bands and jars. Label and store in a cool, dark place.
The reason for the bold letting on the do not retighten is because we have a new canner in the bunch, and she did retightened a few before we saw her. We did check all of the jars and loosen the tight ones.
When I left we had none not sealed so we may have been lucky. Got to go back tomorrow to help can pumpkin butter, J was putting that in the big slow cooker when I left too. She is our resident butter maker. She wont be there to help can but so be it, at least she makes it.
