Ok we spent the day making chicken stock -- tomorrow we will put it in jars. But I got a shock when started to de-bone the meat. I used the chickens back end and backs.. the breasts got snagged for the freezer.. anyway 10 chicken back and all 20 thighs and leg went into the pot with 2 onions quartered, 4 carrots cut in big pieces and same with celery stalks. Put it in about 8:30 this morning and it cooked all day until about 5pm. We cooked it all in the big 40qt SS pot and it looks like we got about 20qts +/- of stock - the shocker was out of about 14lbs of chicken pieces we got less than 6lbs of pulled meat... Ok, I know my chickens don't have much fat but dang that just doesn't seem right. The boys snagged the carrots out of the veggie pile and they disappeared quick and in a hurry LOL. I was busy re-weighing the meat to see if I screwed up but nope its 5lbs and 13oz of meat and we didn't leave the pups much to gnaw on but the bones. Right now the pot setting in the garage cooling down more before it goes in the fridge overnight so the fat can harden on top.. much easier to pull it off that way. All this mess because I wanted to try to can some greens in stock but we didn't have that much - so I fixed that problem LOL.
Today was the pits anyway and that sure didn't help my attitude. I am getting dentures like it or not.. and because I am a wuss when it comes to my teeth they have been pulling them over a 4 week period then I will get them stuck back in on the last visit - next Friday.. As of right now I have 9 front teeth left all the others are gone.. and really I have not had any real pain doing it this way. Anyway when we got back from town I took a nap while the pot was simmering and the boys and the aunt did the produce run to the cafe so I could sleep and not have someone "checking" on me all the time LOL.
Back to the stock - we strained it thru a colander then strained that thru a funnel with 2 paint strainers in it. Its nice and clean now but it does have some chicken fat floating on it - the aunt was just going to jar it as is but with all the trouble I wanted it nicer. I am going to can a few pints of poke in chicken stock to see if it helps the general flavor.. If that works I will try a mix of all the greens both wild and raised in the stock.. The aunt reserved some of the stock to add some sketti noodles to it -- my supper LOL.. I get chicken noodle soup and they get chicken enchiladas.. somehow that aint right..
