When we were in Texas hunting axis deer they made poppers on the grill as an appetizer for lunch one day...they used chicken then but told me that deer meat works well too! And it does!
Yesterday I thawed our some axis tenderloin and marinated it with some sweet/hot jalapeno peppers and soy sauce. I cut the meat in large bite sizes, and mixed it with a half a jar of the peppers along with the juice of the peppers and added about 1/3 of a cup of soy sauce to the mix...it stayed overnite in the fridge. This afternoon, I got the marinated meat out and rolled them up..using some cheap bacon and tooth pics...

One chunk of meat, a slice of pepper and roll it up...you can season them with what ever you have handy..I used some Cavenders greek seasoning over the top as I put them on the grill...

All rolled up and ready to hit the grill...once on the grill you want the bacon to cook...once the bacon is done the meat inside will be done but a bit pink in the center..

As you cook them you will feel the meat stiffen up, once that happens they are nearly done, then they get a light dose of your favorite barbeque sauce on both sides and stay on the grill just long enough for the sauce to carmelize a bit...

When they are all done, they make a great addition to any meal...a pound of meat will make the amount shown here. I have done this with venison round steak and it came out quite nicely. I can tell you that it is very hard to eat just one!!

We fed this to some friends that seldom eat venison, they could not believe how good they were!! Never guessed that venison could be so tasty!!
