J1, I think goose is an acquired taste. this is not in the outhouse so I cant say what I really think about goose meat other than I haven't acquired the taste and not going to work on trying.
When I was small and we did Christmas and the grand's house, grand dad always cooked one the nasty things and then we all were forced to have a bite. For me there is not enough liquor to make one taste even worth smelling while it's cooking. We do not hunt geese and just barely hunt ducks. Hell, dad has wild pet wood ducks at the lake. no joke if you go with him they will come over near you and you can toss them scratch feed. one male will actually eat from dad's hand but he goes down there all the time. I think they know what his four wheeler sounds like and know that it is him. I have ridden it down there and they come out to see me. We do Turkey as main meat on Thanksgiving and ham as main on Christmas. Always other meats but those are the one that get center platter. Dad does get a single goose breast for grand dad but there is none of the everyone needs to have a bite crap. Dad has a giant ham he is going to smoke for Christmas, brother in law got it at the lease the first week in October. I think some of the LA family will be up this year so we will have tons of seafood too. We really don't have a traditional dinner, it is a giant pot luck thing. the only constant is the ham and the buttermilk pies dad makes both. we split the rest up as to what we are good at. One sister is our pastry chef, ok not a real one but she went to school for it but never actually looked for a chefs position.
me I make the rolls, may be the one thing I excel at.
